How to make curry meat
Karele Gosht is a traditional Pakistani dish that is very popular especially in the summer season. It balances the distinct bitterness of the bitter gourd with the spices of the meat, creating a unique and delicious taste. This dish takes a bit of effort to make, but the fun at the end is worth all the effort. So let's know the complete method of making curry meat.
Ingredients:
Meat: 500 grams (boneless or with bone)
Bitter gourd: 4-5 medium sized (peeled and seeded)
Onion: 2 medium size (finely chopped)
Tomatoes: 2 medium sized (chopped)
Garlic ginger paste: 1 tbsp
Yogurt: 3 tbsp
Turmeric: 1 teaspoon
Red Chilli Powder: 1 teaspoon
Coriander powder: 1 tablespoon
Cumin powder: 1 teaspoon
Salt: As per taste
Hot spices: 1 teaspoon
Green Chillies: 2-3 (finely chopped)
Coriander: Finely chopped (for garnish)
Oil: 1/2 cup
Method of preparation:
Preparation of Krills:
Peel the bitter gourds and remove the seeds. Then cut them into round pieces. Apply salt to the bitter gourds and leave them for 20-30 minutes. Afterwards, wash them thoroughly to remove excess salt and bitterness.
Fry the bitter gourd:
Heat oil in a pan and add the washed bitter gourd and fry until light golden. Take out the fried bitter gourds in a plate and keep aside.
Preparation of meat:
Heat oil in a pan and add finely chopped onions and fry until golden. Then add garlic ginger paste and fry for a minute.
Prepare the seasoning:
When the garlic ginger paste is fried well, add the meat and fry the meat well until the color of the meat changes. Now add tomatoes, turmeric, red chillies, coriander powder, cumin powder and salt and mix well. Let it cook for 5-7 minutes until the tomatoes are soft and the spices are roasted well.
Add Yogurt:
Now add curd and mix well with spices. Cook it on medium heat for 5-7 minutes so that the curd dries up and the spices mix well with the meat.
Add the bitter gourd:
Now add the fried bitter gourd to the meat and mix with light hand. Cover and simmer on low heat for 10-15 minutes to allow the bitter gourd and meat to blend and the flavor to develop.
Garnish:
Finally add hot spices and finely chopped green chillies and mix. Garnish with green coriander.How to Serve:
The curry meat is ready. Serve it with hot naan, chapati or plain rice.
