Chole Bhature: A Classic Indian Recipes
Ingredients:
1. For Chole (Chickpea Curry):
- 2 cups dried chickpeas, soaked overnight
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 green chilies, slit
- 1-inch ginger, grated
- 4 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tablespoons oil
2. For Bhature (Fried Bread):
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1 teaspoon sugar
- 1 teaspoon baking powder
- Salt to taste
- Oil for deep frying
Instructions:
1. Prepare Chole:
- Heat oil in a pressure cooker. Add cumin seeds and let them crackle.
- Add chopped onions and sauté until golden brown.
- Add grated ginger, minced garlic, and slit green chilies. Sauté for a minute.
- Add tomato puree and cook until oil separates.
- Add all the dry spices - coriander powder, cumin powder, turmeric powder, red chili powder, and garam masala. Mix well.
- Add soaked chickpeas and salt. Stir to combine.
- Pour in enough water to cover the chickpeas and pressure cook for about 4-5 whistles or until chickpeas are tender.
- Once done, garnish with fresh coriander leaves.
2. Prepare Bhature:
- In a mixing bowl, combine all-purpose flour, yogurt, sugar, baking powder, and salt. Knead into a soft dough. Add water if needed.
- Cover the dough and let it rest for at least 2 hours.
- After resting, divide the dough into small balls and roll them into circles.
- Heat oil in a deep frying pan. Fry the rolled dough until golden brown and puffed up.
- Remove from oil and drain excess oil on paper towels.
3. Serve:
- Serve hot Chole with freshly fried Bhature.
- Enjoy this classic Indian dish with sliced onions, lemon wedges, and green chutney.
